GYUHI TO NE

Gyuhi is a soft, chewy rice confection — and one that keeps on evolving. We knead ours fresh every morning, and wrap it around sweet bean paste, fruit and cream: from the classic habutae mochi to daifuku of our own, where Japanese and Western flavours meet.

Rooted in the old streets of Nihonbashi Kodenmacho, we hope you will find a quiet moment here — the softness, the flavour that opens in your mouth, and the gentle sound (ne) of a Japanese tea break.

The person behind the counter

Just flour and sugar. Nothing to hide behind.

Gyuhi is an old Japanese dough: glutinous rice flour kneaded with sugar. It stays soft far longer than plain mochi, and melts away in the mouth.

I opened this shop here in Nihonbashi Kodenmacho in 2026.

Gyuhi changes its face with the temperature and the humidity of the day. So every morning I feel it with my hands and decide how far to knead. It never comes out the same as yesterday — and I do not intend it to. I work at the bench thinking it can still be better.

I want gyuhi to be tasted as a sweet in its own right, not only as the wrapping around something else. With that in mind, I have kept changing the fillings, little by little.

Please feel free to say hello when you stop by. I will tell you what is good today.

FAQ

Questions

Can I pay in cash?

No — we are a cashless shop. We accept major credit cards, transport IC cards (Suica, PASMO and so on) and QR code payments.

How long do they keep?

Gyuhi is at its best on the day, while it is still soft, so please enjoy it the same day. If you have a long way to carry it, we will add an ice pack.

Can I eat in the shop?

Yes. There are seats inside, and you can have a drink with your sweets. At busy times you may have to wait a little.

Can you hold something for me?

Yes, by phone. It depends on what is left that day, so please call early.

Do you offer gift wrapping?

Not at the moment. We are sorry.
